Green Bay - A Seattle Seahawks fan is trying to smooth things over with Wisconsin after the disputed touchdown call that decided Monday night's Packer game.

Rudy McCoy-Pantoja Jr., a landscaper in Seattle, says he wanted to send local beer, smoked salmon and kringles to Green Bay's mayor, but Jim Schmitt wouldn't accept it.

His office says the mayor doesn't participate with gift exchanges during the regular season.

So McCoy-Pantoja Jr. put his finger on his globe to find a different Wisconsin city and decided on Delavan in southeastern Wisconsin.

Delavan Mayor Mel Nieuwenhuis agreed to exchange gifts. He plans to send six or 12-pack of Miller High Life, cheese and fresh venison he hunted himself.

McCoy-Pantoja tells the Green Bay Press-Gazette someone needed to be positive on this story.

Enzymes: The Little Molecules That Bake Bread

When I first began making bread, the science involved was always in the back of my mind. I had an idea of what occurred?my diagram for the chemical reactions in dough looked something like this:

When I started preparing a manual for a bread-making class, however, I really began to wonder about the details. Is the sugar for fermentation part of flour? How exactly does the yeast process this sugar? Do all the complex flavors of bread really come from one organic molecule, ethanol? Numerous trips to the university libraries helped me understand the enzymes involved in making the dough.

When I realized that flour contains a very small amount of sugar, only one to two percent, I thought, ?Wait a minute, how is that possible? That?s not enough to make dough rise.? Then I figured out that the starch in flour provides most of the sugar for fermentation, and the starch must be broken down into sugar before it can be fermented. This breakdown is the work of enzymes.

An enzyme is defined as a large molecule, usually a protein, that catalyzes a biological reaction. This means that the enzyme speeds up the reaction by reducing whatever energy barrier is preventing the reaction from happening quickly and easily.

When two molecules bump into each other, there is a chance they will react to form new molecules. Sometimes this happens easily?the two molecules each have an unstable site, for example, and when they bump, a bond forms between the sites, creating a new, stable molecule. In other cases, however, bonds in the reacting molecules must break (which requires energy) before new bonds can form. The amount of energy needed to break the old bonds is the energy barrier to the reaction. This is represented by the solid line in the diagram below.

One way to increase the speed of a reaction is to heat it up. Hotter molecules move faster; they possess more energy. When two of them collide, there is a greater chance that the necessary bonds will break and reaction will occur. If more molecules possess the energy needed to get over the barrier, more of the reaction occurs.

The other way to speed up a reaction is to reduce the barrier, as shown by the dashed line in the diagram. When less energy is needed for the reaction, more molecules will possess enough energy to get over the barrier. Reducing the barrier is the job of catalysts. They alter the situation to reduce the barrier to reaction. Enzymes are a subset of catalysts; they work on biological reactions. About 4000 reactions are known to involve enzymes, including most of the reactions that occur in the human body and several reactions in bread dough, described next.

Enzymes catalyze three main reactions in bread-making: breaking starch into maltose, a complex sugar; breaking complex sugars into simple sugars; and breaking protein chains. The breakages could happen without enzymes, but the energy barrier is so large that it is very unlikely. Essentially, the enzymes are necessary for the reactions to occur.

It is easy to start seeing enzymes as little critters that come in, recognize the site where they can work, and begin to chew on bonds or snap them in half. While this is a convenient picture, it does a disservice to the marvels of biology. Enzymes do not think or act, but still manage to arrive at the sites where they are needed. Each enzyme has a very specific job to do and only interacts with the appropriate molecules for which it is designed, ignoring all others. Enzymes work efficiently and are not used up by the process; after the reaction occurs, the original enzyme molecule is left intact and can proceed to a new site.

If the enzyme does not think, how does it manage to perform its specific task? The simplified picture presented in general chemistry textbooks is called the ?lock and key model.? An enzyme has a specific shape that fits together with the substrate, the molecule on which it will be working. The enzyme bonds to the substrate with a weaker chemical bond, a hydrogen bond or hydrophobic bond, for example. It alters the substrate in a way that makes reaction favorable. Once reaction occurs, the enzyme releases the products and moves on.

For example, the substrate sucrose is a complex sugar that can react with a water molecule to form two simple sugar molecules, glucose and fructose.

There is an energy barrier to the reaction because it takes a lot of energy to break the middle bond of the sucrose.

The enzyme sucrase fits together with the sucrose (below). In order to bond to the enzyme, the sucrose must stretch. This stretching weakens the sucrose?s middle bond, which becomes susceptible to attack by water molecules. The energy barrier has been lowered. When a water molecule comes along, the middle bond easily breaks and reacts with the water molecule. The enzyme is now holding the product molecules, which it releases. Sucrose has been broken into glucose and fructose.

Another example emphasizes the bonding nature of the enzymes; they are not simply fitting into substrates like puzzle pieces, snapping into place. Bonds must form. Once bonded, the active site of the enzyme is positioned near the reaction site of the substrate, which it alters to reduce the energy barrier.

In this example, the substrate is a protein. Proteins are chains of amino acids linked by peptide bonds. When a peptide bond forms, a water molecule is released.

A water molecule can come back and break a peptide bond, but it usually does not have enough energy.

The enzyme carboxypeptidase catalyzes the breaking of the last peptide bond in the protein chain, releasing the end amino acid. Carboxypeptidase contains a zinc atom with a positive charge. This zinc atom bonds with the protein near the last peptide bond, pulling the electrons of the bond away from it and, thus, weakening it (below). The enzyme also has a pocket area composed of hydrophobic atoms; if the terminal amino acid has a hydrophobic group on it, the group is attracted to this pocket and held by it. In addition, carboxypeptidase can form hydrogen bonds with the terminal amino acid, further securing it in place.

When a water molecule encounters the weakened peptide bond, it likely now has enough energy to break it, recombining with the broken ends to reform the loose amino acid. The various bonds holding the enzyme to the protein substrate are weakened, and the enzyme is released.

The first enzyme to take action in bread dough is amylase. Amylase acts on starch (either amylose or amylopectin), breaking the starch chain between adjacent sugar rings. There are two kinds of amylase: ?-amylase (alpha-amylase) randomly breaks the chain into smaller pieces while ?-amylase (beta-amylase) breaks maltose units off the end of the chain.

Amylase is found in flour. Wheat kernels contain amylase because they need to break starch down into sugar to use for energy when the kernels germinate. The amount of amylase varies with the weather and harvesting conditions of the wheat, so mills generally test for it and add extra or blend flours to get an appropriate amount.

Amylases are mobilized when water is added to the flour. This is one reason why doughs with a higher hydration often ferment faster?the amylases (and other enzymes) can move about more effectively. To reach the starch molecules, amylases must penetrate the starch?s granules; thus, most of the action in bread dough happens at broken granules, where the starch is available for reaction. Fortunately, a percentage of starch granules are damaged during milling and accessible by the amylases.

An amylase is a big molecule, with hundreds of amino acids linked together. Many different groups contribute to the bonding between the amylase and the starch substrate. In addition, there are several different amylase molecules, and each functions differently. The examples of enzyme action presented above give the general idea.

Because of amylase, some of the starch in bread dough is broken into maltose, a double-ring sugar composed of two glucose molecules; but fermentation reactions require single glucose rings. Simple sugars like glucose also provide flavor to the bread and participate in browning reactions that occur at the crust during baking.

Fortunately, the yeast used in bread-making contains the enzyme maltase, which breaks maltose into glucose. When the yeast cell encounters a maltose molecule, it absorbs it. Maltase then bonds to the maltose and breaks it in two. Yeast cells also contain invertase, another enzyme that can break sucrose, like the sucrase described above. This enzyme works on the small percentage of sucrose found in the flour. These two enzymes are responsible for producing much of the glucose needed by the yeast for fermentation.

The other major enzyme at work in bread dough is protease. Protease acts on protein chains, breaking the peptide bonds between amino acids. Carboxypeptidase, described above, is an example of a protease. There are hundreds of proteases, but only a few are found in bread dough, where they chop the gluten into pieces. Proteases occur naturally in flour, yeast cells, and malt. Their levels are measured at the mill and adjusted in the same way that amylase levels are adjusted.

Proteases in bread dough have been the subject of scientific research for the past hundred years. There has been much debate about their importance. In the early years, scientists were trying to prove their existence and measure relative activity in different brands of flour. They amplified the protease activity by adding non-gluten substrates to the mix. These substrates were ones that protease readily attacks. Eventually someone thought to look at protease activity in normal bread dough and found very little activity.

It seems, however, that this very small activity might be just what is needed in bread dough. Too much protease activity would break up the gluten, destroying the network that forms during kneading. A little bit, however, softens the dough and makes it more workable. If the dough is allowed to autolyse (i.e., rest) or if preferments are used, proteases have time to work before kneading, making the dough easier to knead. (I wonder if this is the origin of the word ?autolyse,? from ?autolysis,? which means ?self-breaking? and could refer to the protein proteases at work on the protein chains.)

In addition to affecting the dough?s consistency, proteases affect its flavor. Proteases result in single amino acids when they break the last peptide bond of the protein chain. These amino acids can participate in the flavor and browning reactions that occur at the crust during baking.

So now, my simplified diagram of the chemical reactions in bread dough looks more like this:

Blood shows, known as munera, became a spectator sport in ancient Rome, and the main purpose for holding such an event was to entertain the crowds. According to Donald G. Kyle, in his book Spectacles of Death in Ancient Rome, these spectacles played a major role in the festivals, social life, and public interactions of ancient Roman citizens for over a millennium. These events were popular, and Romans of all classes found something redeeming or entertaining about the shows: ?[T]he Roman games are ludi, amusements, entertainments? and the performers exist for the spectators.? Many of these spectators saw the bloodshed and death of the gladiators as fun and even relaxing. Romans flocked to the arenas in the thousands. The popularity of these shows can be explained by the Roman love and desire for violence. To exemplify these Roman values, in the spectacles of the Roman amphitheatre the death of the gladiator was not trivial but, instead, was often the entertainment?s climax. Gladiators often died in these sports and if, by chance, their lives were spared, it was only because the provider of the games wished to spare him. Romans were attracted to the arena ?by the allure of violence, by the exotic and erotic sights, and by an appreciation of the skill and courage of some of the participants??

Republican study warns against bailout of state pensions

(Reuters) - State and local governments facing pension liabilities that already total in the trillions of dollar will be forced to seek bailouts from the government, Republican Party Congressional staffers said in a study released on Wednesday, as they warned that such bailouts could have dire consequences.

Republican staff of the U.S. Congress Joint Economic Committee said with state debt topping $4 trillion, including $2.8 trillion in unfunded pension benefits and at least $627 billion for retiree health care, states may buckle under the pressure to raise taxes, cut spending and take other measures to pay off their debt.

"Despite the massive federal debt and fiscal imbalances, it will be hard for Washington policy makers to deny sympathetic retired teachers, police and firefighters after a previous Congress bailed out Wall Street and U.S. automakers," the Republican staff commentary said.

But it warned that any federal bailout would test the political fabric of the nation, citing the tensions in the European Union over the Greek bailout as a similar situation.

In a federal bailout, taxpayers in U.S. states now keeping up with their pension liabilities would be paying for states with the worst-funded public retirement systems, the study said.

Because of the difficulties faced in reforming public pension systems -- including union opposition to any reduction in pension and other benefits and the protections provided by law and even by state constitutions -- the study said that a different approach should be taken.

It recommended that the U.S. government reduce its potential aid to states in proportion to their unfunded liabilities until their pension funds become solvent over a specific time frame.

It also suggested that the ability of states to issue tax-free bonds could be revoked if their pension funds are expected to go broke within 10 years.

"As undesirable as a federal bailout of state pensions is, setting forth the terms and conditions of a potential bailout may be exactly what is needed to prevent one from happening," the study said. "If the states understand how severe the terms of a federal bailout would be, they are more likely to take action now to fix their unsustainable pensions."

WikiLeaks' Assange to address U.N. on asylum bid

UNITED NATIONS (AP) ? WikiLeaks founder Julian Assange plans to address a meeting on the sidelines of the U.N. General Assembly via a videolink from his hideout at Ecuador's London embassy, seeking to draw new attention to his efforts to avoid extradition to Sweden over sex crimes allegations.

Ecuador's mission to the United Nations said Tuesday that Assange was scheduled to speak Wednesday alongside foreign minister Ricardo Patino at a specially convened event to discuss his asylum case.

The Australian activist is seeking to avoid extradition to Sweden for questioning over sex crimes allegations and has been sheltered inside Ecuador's embassy in London ? beyond the reach of British police ? since he fled there on June 19.

Since then President Rafael Correa has granted Assange asylum, but he is unable to leave the country's tiny mission. If he steps outside the apartment-sized embassy, he will be arrested by police who surround the building.

Assange and his supporters claim that the Swedish sex case is part of a Washington-orchestrated plot to make him stand trial in the United States over his work with WikiLeaks, which has published thousands of secret U.S. diplomatic cables and other documents. Both Sweden and the U.S. reject that claim.

In his last public appearance, a speech in August from the balcony of Ecuador's embassy, Assange cast himself as the victim of an American "witch hunt" over his secret-spilling website.

British Foreign Secretary William Hague said that the U.N. was dealing with "much bigger issues" than Assange's fate, but acknowledged there was no current prospect of a resolution to the case in discussions with Ecuador.

"We agreed that we would continue to talk, and we will continue to talk about this issue with the government of Ecuador. But I see no sign of any break through," Hague told reporters at the U.N.

He said the U.K. had an obligation to uphold British and European law by sending Assange to Sweden. "This may go on for some time," Hague said.

Quito and London had clashed over the case, after the U.K. suggested that one potential option would be to invoke a little-known law to strip Ecuador's embassy of diplomatic privileges ? meaning police would be free to move in and detain Assange.

Hague has insisted that diplomats have no intention of carrying out that action, and had simply been briefing Ecuador on all possible legal options.

From Nigeria to Athens, Muslim protests rumble on

DUBAI (Reuters) - Muslims protested in Nigeria, Iran, Greece and Turkey on Sunday to show anti-Western anger against a film and cartoons insulting Islam had not dissipated.

As delegates from around the world gathered in New York for a U.N. General Assembly where the clash between free speech and blasphemy is bound to be raised, U.S. flags were once again burning in parts of the Muslim world.

Iranian students chanted "Death to America" and "Death to Israel" outside the French embassy in Tehran in protest at the decision by satirical magazine Charlie Hebdo to publish cartoons of the Prophet Mohammad, days after widespread protests - some deadly - against a film made in the United States.

Shi'ite Muslims in the Nigerian town of Katsina burned U.S., French and Israeli flags and a religious leader called for protests to continue until the makers of the film and cartoons are punished.

In Pakistan, where fifteen people were killed in protests on Friday, a government minister has offered $100,000 to anyone who kills the maker of the short, amateurish video "The Innocence of Muslims". Calls have increased for a U.N. measure outlawing insults to Islam and blasphemy in general.

In Athens, some protesters hurled bottles of water, stones and shoes at police who responded with teargas. Calm returned when demonstrators interrupted the protest to pray.

Hours later, dozens of Muslim inmates in Athens' main prison set mattresses and bed sheets on fire in protest. Firemen with four engines battled the flames in some cells but police and government officials said late at night the situation was under control.

ON ALERT

Protests around the world were relatively small and calm, but Western embassies remained on alert after the U.S. ambassador to Libya and three other Americans were killed in one of the first protests, on September 11.

The upsurge of Muslim anger - just weeks before U.S. elections - have confronted President Barack Obama with a setback yet in his efforts to keep the "Arab Spring" revolutions from fuelling a new wave of anti-Americanism.

In U.S. ally Turkey, a secular Muslim state often seen as a bridge between the Islamic world and the West, protesters set fire to U.S. and Israeli flags on Sunday.

"May the hands that touch Mohammad break," chanted some 200 protesters before peacefully dispersing.

"We will certainly not allow uncontrolled protests, but we will not just grin and bear it when Islam's prophet is insulted," Prime Minister Tayyip Erdogan told party members at the weekend.

"The protests in the Muslim world must be measured, and the West should show a determined stance against Islamophobia."

US Military Academy superintendent visits Indian National Defence Academy

Pune: Lieutenant General David H. Huntoon Junior, Superintendent of the U.S. Military Academy, West Point, on Sunday paid a visit to Prestigious National Defence Academy (NDA). He was received by Rear Admiral Anand Iyer, VSM, Deputy Commandant and Chief Instructor of NDA .The visiting General held discussions with Lt Gen Ashok Singh AVSM, SM, VSM, Commandant NDA.

The visiting General was briefed on various aspects of training at the academy and conducted around and shown the world class training infrastructure at the academy.

The NDA not only trains Indian cadets but also cadets from friendly foreign countries. It has trained more than 700 cadets from 23 friendly foreign countries.

What to Consider for Non-Profit Governance - Business 2 Community

Last week we were fortunate enough to have Anders Ourom, a lawyer specializing in non-profits, as a presenter at one of our Association Nights. It was apparent that the tips and updates provided were of great use to those in attendance, so we thought why not write a blog on it! Here are some key takeaways from the event.

Bylaws
Schedule B of the Society Act offers societies the option to adopt a set of pre-written bylaws; these are generally only useful to very small societies. There may also be the urge to adopt similar ones to another association. Keep in mind that just because something works for one society, does not mean it will for another.

Notice of Annual General Meeting (AGM)
Up until 2004, societies were required to give their members notice of their Annual General Meeting (AGM) by post or in-person. A recent amendment to the Society Act uses the word ?written? more loosely. Many lawyers now interpret this to mean that ?written? may also include communications via email. Electronic communications can save you loads of time when it comes to administration. No more mail merges, stuffing envelopes, and stamps!

Part 6, Section 60, Notice
?A society must give not less than 14 days? written notice of a general meeting to those members entitled to receive notice of a general meeting, but those members may waive or reduce the period of notice for a particular meeting by unanimous consent in writing.?

If you are using electronic communications you should always keep a list of those which you?ve sent items to. A common mistake for societies is that they use the blind carbon copy (Bcc) function. This makes it nearly impossible for you to demonstrate that you?ve provided written notice if ever anyone was to question you.

Annual Reports
Out of the 26,000 registered societies 800 fail to file their annual report every year; nearly half of these associations have simply forgotten. Be careful; if you forget to file a report for two consecutive years, you will lose your status as a society. So how do you make sure this doesn?t happen?

  1. Assign the task
    Making an assumption that it?s someone else?s job to do the filing is a big mistake. Assign the task to an administrator or director. If that person moves on to another appointment or employer, make sure that the task is reassigned.
  2. File the report online
    If you?re tech savvy enough, try filing your report online every year. It saves time, money, and trees! You can file it online with BC Registry Services.

Be Prepared for More Amendments
There will be a new Society Act released in the next couple of years (2014/2015) which will present new limitations and requirements. It?s a good idea to keep an eye out for these amendments as they may affect you.

(AP) ? President Barack Obama is faulting Congress for leaving town with several pieces of unfinished business on its plate, including measures to help veterans, farmers and homeowners.

Obama accuses lawmakers in his weekend radio and Internet address of being "more worried about their jobs and their paychecks" than their constituents.

He says lawmakers missed opportunities to help the economy and wants them to come back in November to finish work on a veterans' job plan, farm policy and helping homeowners refinance.

Alabama Sen. Jeff Sessions says in the Republican address that Senate Democrats adjourned having failed to meet their "most basic obligations" of producing a budget plan and didn't address looming tax hikes and defense cuts.

Sessions says if given the chance, Republicans will get the government "under control."

Libya: 2 killed in protester-militia clashes

(AP) ? Two Libyan protesters were killed and dozens wounded early Saturday as hundreds of demonstrators attacked militia compounds in a surge of anger at armed groups in Benghazi whose unchecked powers led to last week's killing of the U.S. ambassador.

For many Libyans, the Sept. 11 attack on the U.S. Consulate in Benghazi was the last straw in one of the biggest problems Libya has faced since last year's ouster and death of longtime dictator Moammar Gadhafi: the multiple mini-armies armed with machine guns and rocket-propelled grenades that are stronger than government security forces.

But in an indication of government fears of a sudden security vacuum without the militias it relies on to keep order, officials called on protesters to respect "legitimate" militias.

While the late Friday protests were planned in advance though social networking sites and flyers, the storming of the heavily armed militia headquarters took many by surprise. After breaking off from a huge anti-militia march ? the biggest in the eastern city since the fall of Gadhafi's regime last October ? protesters overtook a building used by Islamist militia Ansar al-Sharia, set fire to a vehicle and offices after freeing three detainees held in an underground cell. The group is linked to the killing of U.S. Amb. Chris Stevens.

Protesters on foot and in cars, some carrying guns and others machetes, moved to another heavy armed compound on Benghazi's outskirts that houses Rafallah Sahati militia.

Panicked, Libyan government officials urged protesters to differentiate between what it called "legitimate and non-legitimate" militias.

The militias, a legacy of the rag-tag popular forces that fought Gadhafi's regime, tout themselves as protectors of Libya's revolution, providing security where police cannot. But they now face public criticism and are accused of acting like gangs, detaining and intimidating rivals and carrying out killings.

Libyan military chief of staff Youssef al-Mangoush said three big militias ? Rafallah Sahati, Feb. 17 and Libya Shield ? are considered "pro-government" and warned protesters against pushing for what he described as "counter-revolution" goals. The government heavily depended on Rafallah Sahati, for example, to secure Benghazi during the country's first national elections in July in decades. The militia took its name from an Islamist fighter who battled fiercely against Gadhafi's forces earlier in the revolution.

But most of Libya's militias still answer to their commanders before the state. Protesters, like those on Friday, want the fighters to be trained outside Benghazi and follow state army orders as individual soldiers and not as part of a militia. Many of the militiamen are unruly and undisciplined civilians who raised arms during the eight-month war.

Mohammed al-Megarif, head of Libya's General National Congress, ordered protesters to leave alone militias that are "under state legitimacy, and go home." Nearly seven hours of clashes ended shortly after his demand that was broadcast on local Libyan TV channels.

Standing next to charred cars and several pickup trucks mounted with anti-aircraft guns, weary armed militiamen guarded the entrance of the Rafallah Sahati compound. The compound was once one of Gadhafi's houses. Some of the men wore military uniforms, while others were dressed in Afghani-style clothes.

"Those you call protesters are looters and thieves," said Nour Eddin al-Haddad, a young armed man with hanging a rifle on his back. "We fought for the revolution. We are the real revolutionaries. We are part of the army. I have official documents to prove it."

However, 22-year-old protester Farag Akwash, who was wounded with a bullet in his arm, described it as "a Moammar militia."

"If you are really an army force, you wouldn't shoot at the people. You wouldn't kill people. You protect people," said Akwash whose arm was hidden under a bandage Benghazi Medical Center. "We don't want to see militias in the city anymore. We only want to see army and police."

Mohammed al-Fakhri, manager of al-Hawari hospital in Benghazi, said two young men died and about 30 were injured in the clashes.

Some media reports put the number of dead to four, but it was not immediately possible to confirm that.
